Biofilm-forming bacteria, which colonise the surfaces of equipment in the dairy industry, may adversely affect the safety and quality of the milk and its products.
It is difficult to check areas where access is almost impossible routinely. Still, with innovative equipment, an examination is now possible to identify areas of biofilms which release bacteria that contaminate the product as it passes surfaces.
